Located at the bottom of the 5 cascading pools of the Andaz Maui Resort, the new Morimoto’s is the latest addition to the “Iron Chef’s” restaurant quiver. The project elements combine the use of natural products starting with split face basalt stone and the striking red stainless steel Morimoto sign welcoming patrons at the entry, teak wood wall panels and columns framing the 12 x 24 basalt tile flooring in the interior dining room, and teak wood cabinetry throughout. Guests sitting at the solid oak top sushi bar flanked with distressed teak heavy timber grills, blackened steel art shelves and topped out with a 17’ custom steel and fabric light fixture enjoy watching the sushi chef’s prepare their meal. The large open all stainless steel kitchen is home to the sushi bar chef’s, pizza station, pastry chef, prep chef, and main cook line chef’s all within the view of the guests. With the need for more space, Honolulu Builders design/built 2 outdoor pergolas out of aluminum and fabric which house a second dining room and bar at poolside featuring motorized retractable roofs, stainless steel art plinths, and a granite and oak bar to complete the dining experience.
